Experience wood-fired cuisine at its finest in InterContinental Sanctuary Cove Resort’s signature dining destination: The Fireplace. Chef Matt Hart has designed an a la carte menu destined to infuse the Gold Coast’s local produce with The Fireplace’s signature smokey flavour.

While still harbouring the classics such as lamb striploin with sweet potato and red wine glaze and the braised beef short rib, the new menu ships into new territory with an additional three pasta dishes including moorish pulled chicken gnocchi bathed in sage beurre noisette. Along with highlighted mains of pork belly dressed with fig puree and wrapped in prosciutto, and Queensland Barramundi teamed with fresh octopus and spinach vichyssoise.
